New trainees start the IFS journey

 A new batch of trainees have joined the Chief Cook Course at our training facility in the Maritime Academy of Asia and the Pacific (MAAP) in the Philippines.

 

The trainees, which represent different IFS clients, will look at upskilling their existing knowledge and abilities. This intense, but rewarding, week of training will seek to  prepare them to meet IFS standards in the galleys.

 

The group arrived on Sunday for an initial orientation and safety induction, in order to set the tone for the whole week.

 

Our team of experienced Catering Instructors will guide the group of Chief Cooks on the following topics:

  1. Cooking: During the week, the cooks prepare diverse meals from our training menu, which emphasizes different cuisines and dietary needs.
  2. Healthy Meals: The cooks don’t just make tasty meals, but also prepare healthy and nutritious food.
  3. Baking: With a focus on baking, our cooks learn basic dough preparation techniques that serve as a base for all sorts of bread and pastries.
  4. Menu Planning: Our trainees learn to plan diverse, budget-conscious, and health-conscious menus, taking into account religious and cultural differences on board.
  5. Inventory Management: The cooks receive a refresher on inventory management and calculation of current stock.
  6. Ordering: We teach our trainees about best practices for ordering provisions.
  7. Safety: Our training reinforces best practices for safety in the galley environment.
  8. HACCP and Hygiene: We cover HACCP principles and general food safety.
  9. IFS Vessel Interface (IVI): We train the cooks on IVI, our brand-new ordering platform.

All the skills and knowledge we provide are designed to be immediately put into practice in a real-world maritime setting. Our training serves as a link between theoretical knowledge and practical skills, allowing Chief Cooks to excel in their role at sea.
